Okay I am a monk level 122. I am maxed out agi and 200 something CRT....I wanna become a tank be able to stand in battle decent.
I have iron armor +4 with hp20% bunny ears with hp20% s.bangle ns Also have kodas 2 +6 slot
With all this I have about 8k health and 800 mp....but my defense sucks or something because I die easily. Any suggestions?

If you want to be tank, you have to add VIT, at least. Most tank monks i knew have hybrid stats. Meaning, they have 4 stats added to be stable.
Someone recommended Hoplon upgrade as additionals for tank with agi. I forgot the rest. ._.
ps. having high hp wont do in front of bosses that loves to crt at all and pure agi/crt cant tank most of the bosses after mithurna. . ._.

Do you want to be a tank or not die so easily? Those a very different things.
If you want to actually be a tank you will have a hard time with a lot of bosses. Monks don't have any real damage reduction abilities that other classes can get that are more suited to tanking(Paladin, Samurai, Enchanter, and Ninja sorta). It probably can be done but will still be inferior to other tanks.
If you want to just survive well then you can probably almost get away with it without adding much VIT. Basically when you are soloing don't use Rush all that much unless you don't need to swap gear out and won't die. If you can kill it with ease with Rush and have no issues with MP or HP then go for it. If you are the DPS of a party then you use Rush+Geobreaker. You will die as a melee DPS, even Gladiators die as melee DPS sometimes and they usually have higher VIT(at least at high levels).
For now since you are only level 122 a lot of stuff will kill you. Like maybe you are tying to kill High Ents or something, at 122 that just isn't something you should be grinding on. Nagas should pose nearly no threat to you at all and will be decent exp for your level still.
Sion Capell and Leather Coat UP will greatly increase your Heal which will also help with survivability. I recommend not using Leather Coat unless you need it, which will mostly be for MQ solo.

Most my guild members are doing things and I am usually on my own so Monks dont tank, they solo, and to solo u need a little more than avg hp and lots of eva so u need stuff like pao last up carnyx up claw up bunny ear iron up aulis gale matar xtals stuff like that^^ Tanking wont get u anywhere in iruna as u progress thru the game.

I haved same problem on lower lvl and solution for me was gear:
sion lether coat up g.ring s.bangle/m.javel/d.charm
But my build was a bit difrent bcz i added some int b4 maxing crt ( around 30 int to make better mp pool - if u set bossheit on all ur slots u dont need int atm, personaly i think that bossheit is best at low lvl for cleric/monks with agi crt build ).
if u wanna grind ents around 4.5-5k hp is enought with lether coat and eva gear ( with this equip and maxed agi u get 583 eva so ents hits u once per 8/10 hits, with high healing rate of armor its ok)
This way allow u to farm ents winouth or with low remagic/salt consumption - bless skill is a basic here.
rmmbr one thing if u using s.bangle it reduce mp regeneration of bless skill so be carefull!
