Hello i recently started playing toram currently 1 mage lvl 36 (mobs) 1knucle lvl 42 (bosses) ive been told by friends you need to break bosses to get items but i got first golem xtall without breaking , does breaking really do anything?

you don't NEED to break bosses to get rare drops, breaking bosses just increases the drop rate. Would you rather have a low drop rate or a high one, just cuz you break all the parts doesn't mean you'll get a rare faster than if you didn't break at all, it just ups the chances of getting a rare. People like breaking bosses cuz there's a higher probability of you getting the rares.

Breaking increases the drop rate for items that come from bosses' breakable parts. Drop rate of other things like xtals shouldn't be affected, though we can't know it for sure.
As a knuckle character, you're most of the time expected to take the breaker role in party because knuckle users can regenerate MP fast with their fast attack speed and they have great breaking skills that require only 100 MP. Using breaking skills has also another great benefit, that is canceling enemy's area/red attacks when they appear. That'll make the tank's job a lot easier and possibly protect your whole party from getting wiped out. There's probably more to mention, but you should definitely break as much as you can.
