Stuff to get skill wise:
Sword: Hard Hit Level 5 Astute level 5-10. Preferably 10, it does insane damage Trigger Slash level 10: Damage+MP Recovery Sonic Blade level 5: Prerequisite and also for AOE Spiral Air Skill point dump
Knight: Provoke level 5: Prerequisite for Rage Slash. I honestly wouldn't use this Rage Slash level 10: Great for keeping hate. Use it as the 3rd Skill in a combo. Does okay damage as well
Survival: Safe Rest level 5: Prerequisite HP Increase level 10: Obviously want more HP haha
Guard: Heavy Armor Mastery level 10: Increased Guard Rate when using Heavy Armors. You want to remodel an armor you want to use to Heavy before getting this
Stats wise people are all over the place with VIT haha. A lot of people add about 90-110 in STR/DEX combined then add VIT. Damage is still important while tanking at the moment. Don't touch any stats that aren't STR, DEX, or VIT and you will probably end up okay haha.

THIS IS NOT AN ATTEMPT AT AN OPTIMAL BUILD. Just another route to a desired aesthetic.
I went sword and board. Stats went 3/1/1 in dex/vit/int.
Passed on knight and shield skills and went for priest instead (gloria is pretty cool).
Was hoping to avoid survival tree, but am currently at 5 rest/5 hp up.
Sword techniques are all 5 (I really want astute 10). 5s in blade passives also.
Guard skill Heavy is currently where I'm spending points.
I tank easily, and some how successfully hold aggro- gear and, I'm guessing here, my big stupid 100MP combo. Anecdotal only, but I'm thinking bosses love to interrupt combos.
I am also so very slow. And damage output is... I want to say disappointing, but honestly it's what you would expect.
With your accuracy, you can hit anything. With your defense and healing, you will outlast any opponent. With the damage you generate, solo boss (and mini boss) runs are slow going. But a win is a win.

Most of what I would choose, except: Knight: I rather use Provoke maxed out. First you dont have to use Rage sword in a too long combo (you want to dodge them AOEs) and Provoke never misses unlike Rage Sword, also Provoke can be used from range. And instead of Provoke5 -> Rage Blade10 you can actually save 5 skill points going Provoke10. Just a few points why Provoke can be good. People always argue about this topic Shield: Shield Mastery 5 -> Shield Bash 10 Shield Bash at 10 is also a must in my eyes. Stunning the enemy every now and then can prevent lots of auto-attack damage. Also helps with breaking the enemy. Stats wise I go VIT2:DEX2:MTL1

Shield bash is very great- 100MP stun. Stun is leagues better than the flinch received from Hard Hit.
Provoke- I will say this, aggro is THE single biggest responsibility of tank. Some will say 'survivial', but I am confident every mage at the back of the party will take 30 seconds of aggro freedom from a dead tank over an invulnerable meat shield a boss for all intensive purposes ignores. The question in my mind is 'am I maintaining hate?' If NO- Provoke instantly becomes a MUST and skill points are distributed accordingly. If YES (I am maintaining hate)- Provoke gets put off to another day. Perhaps game imitates life in this instance- no difficulty maintaining aggro in real life, either.
(Popular thought is max Provoke ASAP. If in doubt, adhere to the majority)
P.S. Priest tree has Holy Fist (physical attack, light element) and Holy Light (magic, circumvents a measure of your opponents DEF, light element), which both sound very 'paladin-esk'. Didn't enjoy either
