You will not be able to use provoke 3... that is intended for knights. So as long as you have provoke 2 you will be ok.
Double attack 3 is in Rokoko windhole... dragists

Defense 3 is from stone golems yes. The defense 2 quest is from Varuna in Fort Bailune.
