I found the one giving the profession, her name is riaty and she's a new NPC in Capital City Elban. She's located in the palace, directly in front of you when entering, impossible to miss her.
I've talked to her and it seems Servant is not available for Bishops (I'm level 195 bishop, but there was no way for me to become Servant), I'm assuming that means it's also unavailable for monks. I'm guessing cleric only...
@edit..
I don't have a cleric char right now, so I won't be able to check this. But I can train up one of my alts to level 120 and have it become cleric->servant, I'll try get more info soon

Special classes, like Nin, Sam, Mins, are the only ones you can get regardless of current class.

No not from special class , i can confirm this as i just went to check out the skill Info's , you can only become these new classes from their corresponding classes for example Knight>Beast Knight

it only sais NPC name and city, not requirements or exact location To clarify, what info is/was inaccurate? Incomplete is understandable, it's an announcement, not a How to Guide.

Is there a certain main quest you need to be on before you try becoming a servant? I'm lvl 191 and a padalian I've been told I should be able to become a servant and I hardly started my mq

I'm lvl 191 and a padalian I've been told I should be able to become a servant and I hardly started my mq I assume you mean paladin, also servant is not a special class. To become a servant you need to be a cleric, level 120 for apprentice and level 140 for full class.
